List of Ingredients
- 1 tsp chopped fresh thyme
- 1 tsp salt
- 1/8 tsp ground pepper
- 1/4 cup stick butter, melted
- 6 large new potatoes, peeled and sliced
- 1 cup sliced scallions
- Lavish option: 1/3 cup shredded Monterey Jack cheese
Instructions
- Preheat oven to 450 degrees.
- In bowl, combine thyme, salt and pepper.
- Line a 9" pie plate or cast-iron skillet with aluminum foil; brush with butter. Layer potatoes in a circular pattern. Brush with 1 T butter. Sprinkle with 1/4 cup scallions, 1/2 tsp thyme mixture and 1 1/2 T cheese, if desired. Repeat until dish is full. Cover with foil and weigh down with a saucepot lid.
- Bake on center rack of oven 50 minutes. Uncover and bake on lower rack 20 minutes more. Cool 5 minutes; unmold and serve.

POTATOES ANNA 216 WAYS:
Skip the scallions and thyme, and substitute items from columns A and B, respectively. For a lavish variation, replace the optional Monterey Jack cheese with a choice from column C.
