    • 8 small red potatoes, scrubbed and quartered
    • 8 cloves garlic, peeled
    • 3 T. olive oil
    • 1/2 t. freshly ground pepper
    • 1/3 c. minced fresh rosemary
    • 1/2 c. chopped green onions


    Instructions


    1. Preheat oven to 400 degrees.
    2. Place potatoes and garlic in a single layer in a baking dish. Drizzle with olive oil and toss potatoes to coat evenly. Sprinkle with salt, pepper and rosemary and toss again.
    3. Roast for 30 minutes or until potatoes are crisp on the outside and tender inside. Sprinkle with green onions and serve.
