    These crispy baby new potatoes are great with fish, meat or by themselves. They're a cross between a baked potato and a potato chip. What could be better?


    List of Ingredients


    • 1 1/2 lbs baby new potatoes, scrubbed and quartered
    • 2 T olive oil
    • 1/2 tsp salt
    • 1/2 tsp pepper
    • 1 1/2 tsps chopped fresh Italian parsley
    • 1 tsp chopped fresh rosemary
    • 1 tsp chopped fresh oregano
    • 1 tsp minced fresh chives


    Instructions


    1. Preheat oven to 425 degrees.
    2. Place the new potatoes in a large bowl and drizzle them with the olive oil. Add the salt, pepper, and herbs and toss.
    3. Place the poatoes on a baking sheet, making sure that none of the potatoes are touching. (This helps them become crispy since the heat can only sear the exposed sides.)
    4. Roast the potatoes in the oven for 20 minutes. Turn the potatoes with a metal spatula, making sure that all sides are becoming crisp. Roast for another 20 minutes. The poatoes should be browned on all sides and a fork should easily pierce their flesh.
    5. Place the potatoes in a shallow bowl, and serve.
