Roasted Brussel Sprouts

- 1 1/2 lbs Brussel sprouts, trimmed and halved lengthwise
- 2 shallots, peeled and sliced thin
- 1/4 cup olive oil
- 1 T honey
- salt and pepper, to taste
Instructions
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
- Toss the Brussel sprouts, shallots, olive oil, honey, salt and pepper in a bowl and place on the prepared baking sheet.
- Place in the oven and roast for 20-25 minutes, or until the Brussel sprouts are soft and the outside leaves are crispy.
