Roasted Carrots

List of Ingredients
- 2 lbs carrots, peeled and cut into 1 1/2" pieces on a diagonal
- 1/3 cup butter, melted
- 2 T minced dill
- salt and freshly ground pepper
Instructions
- Mix butter, salt and pepper. Pour over carrots. Spread out on a greased baking sheet.
- Place in oven at 400 degrees and roast 20 minutes or until tender.
- Toss with fresh dill and serve.
Final Comments
Serve for New Year's with french onion soup; caesar salad; medallions of beef with peppercorns and mustard; garlic mashed potatoes; greek new year sweet bread; easy creme de menthe cake
