- 6 slices bacon
- 2 tablespoons chopped onions
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup sour cream
- 2 16-ounce packages frozen corn kernels, thawed
- 1 tablespoon chopped parsley
Instructions
- Preheat oven to 350°F. Spray a 1-1/2 quart casserole with non-stick vegetable spray.
- In a large skillet, cook bacon until crisp; remove from skillet. Drain and crumble. Drain all but 2 tablespoons drippings from skillet. Add onion and sauté until tender. Stir in flour, salt, and pepper. Gradually stir in sour cream until mixture is smooth. Heat to just boiling. Add corn cook for 5 minutes or until heated thoroughly. Fold in half the bacon. Spoon into prepared casserole; sprinkle with parsley and remaining bacon.
- Bake for 30 minutes.
