    Simple Turnip Greens

    Recipe Introduction


    Trim away tough stalks and stems from greens, rinse until all grit is removed.


    List of Ingredients


    • 1 bunch fresh turnip greens (about 4 1/2 lbs)
    • 1 lb salt pork (streak of lean) or smoked pork shoulder or smoked turkey wing
    • 3 quarts water
    • 1/4 tsp freshly ground pepper
    • 2 tsps sugar (optional)


    Instructions


    1. Remove and discard stems and discolored spots from turnip greens. Wash greens thoroughly; drain and tear into pieces. Set aside.
    2. Slice salt pork at 1/4-inch intervals, cutting to, but not through, the skin.
    3. Combine salt pork, 3 quarts water, pepper, and, if desired, sugar in a Dutch oven; bring to a boil. Cover, reduce heat, and simmer 1 hour.
    4. Add greens, and cook, uncovered, 30 to 35 minutes or until tender. Serve with a slotted spoon.
