    List of Ingredients


    • 5 lbs assorted greens, such as kale, collard greens, or mustard greens
    • 1 1/2 lbs smoked turkey wings
    • 1 medium onion
    • 8 cups water
    • 1 tsp salt
    • Hot pepper sauce


    Instructions


    1. Remove stems and tough ribs from greens; rinse well with cool running water. Cut into 1/2" pieces.
    2. In 8-quart saucepan, combine turkey wings, onion and water; heat to boiling over high heat. Add greens in batches, stirring to wilt. Heat to boiling. Reduce heat; cover and simmer until very tender, about 1 hour. Discard turkey wings. Serve with hot pepper sauce.
