Stir-Fried Bok Choy

- 1 head bok choy (2 lbs)
- 1 T vegetable oil
- 1 garlic clove, crushed
- 2 T soy sauce
Instructions
- Cut bok choy stalks from leaves; cut stalks and leaves, separately, into 1/2" thick stalks.
- In 10" skillet, heat oil over medium-high heat. Add garlic and cook until golden. Add bok choy stalks and cook, stirring frequently, until just tender, about 4 minutes. Add bok choy leaves and stir-fry until wilted, about 2 minutes longer. Stir in soy sauce and remove from heat.
