Stuffed Couscous Bell Peppers

List of Ingredients
- 4 bell peppers
- 1/2 cup onion, chopped
- 1/2 cup bell pepper, chopped
- 2 T olive oil and some for drizzling
- 1 T minced garlic
- 1 tsp salt and pepper each
- 1 T lemon juice
- 1 box couscous
- 1 cup parmesan cheese, grated
- 1/2 cup bread crumbs
Instructions
- Cut off the top of the bell peppers and clean out the seeds. Bring a large pot of water to a boil and boil the peppers for approximately 5 minutes. Take out and allow to cool. Saute the onion, bell peppers and garlic in a saute pan with olive oil until just tender (about 6 minutes). Set aside.
- In a large microwavable bowl, pour in 1 1/4 cups of water, 1 T olive oil and the sauteed vegetables. Microwave on high covered for 5 minutes. Remove and stir in the couscous. Cover and leave alone for 5 minutes. Now stir in 3/4 cup of the parmesan cheese and spoon mixture into the cooled bell peppers. Top with the remaining cheese and bread crumbs - drizzle with olive oil and bake at 400 for 15 minutes or until nice and golden brown on top.
