    • 4 T olive oil
    • 1 lb ripe tomatoes, chopped
    • 3 onions, sliced
    • 2 garlic cloves, chopped
    • 1 lb eggplant, roughly sliced
    • 1 lb zucchini, roughly sliced
    • 1 green bell pepper, seeded, quartered
    • 1 red bell pepper, seeded, quartered
    • 1 yellow bell pepper, seeded, quartered
    • 1 pinch salt
    • 1 pinch pepper, freshly ground


    Instructions


    1. Heat the oil in a large heavy saucepan over a moderate heat. Add the tomatoes first, then add the onions, garlic, eggplant, zucchini, peppers and season with salt and pepper to taste. Cover the pan and cook until the vegetables are reduced to a thick stew. (Apart from the tomatoes and onions, the other vegetables should retain an identifiable shape.) Remove from the heat and correct the seasoning. Serve as a first course or as a main dish.
