Sesame-Vegetable Lo Mein

List of Ingredients
- 1 (7 oz) pkg vermicelli
- 3 T dark sesame oil, divided
- 2 cups fresh sugar snap peas or snow pea pods
- 2 cups brocolli florets
- 1 large red bell pepper, cut into strips,
- 2 carrots, shredded
- 4 green onions, diagonally sliced
- 2 garlic cloves, pressed
- 1 tsp grated fresh ginger
- 1/4 tsp dried crushed red pepper
- 1/4 cup soy sauce
- 1 T water
- 1 T toasted sesame seeds (optional)
Instructions
- Prepare pasta according to package directions.
- Heat 2 T oil in a wok or large skillet over medium-high heat 1 minute or until hot. Add peas and next 7 ingredients, and stir-fry 5 to 7 minutes or until crisp-tender.
- Stir in soy sauce and 1 t water; add pasta, tossing until throughly heated. Remove from heat, and toss with remaining 1 T oil and, if desired, 1 T sesame seeds. Serve immediately.
