    Sesame-Vegetable Lo Mein

    List of Ingredients


    • 1 (7 oz) pkg vermicelli
    • 3 T dark sesame oil, divided
    • 2 cups fresh sugar snap peas or snow pea pods
    • 2 cups brocolli florets
    • 1 large red bell pepper, cut into strips,
    • 2 carrots, shredded
    • 4 green onions, diagonally sliced
    • 2 garlic cloves, pressed
    • 1 tsp grated fresh ginger
    • 1/4 tsp dried crushed red pepper
    • 1/4 cup soy sauce
    • 1 T water
    • 1 T toasted sesame seeds (optional)


    Instructions


    1. Prepare pasta according to package directions.
    2. Heat 2 T oil in a wok or large skillet over medium-high heat 1 minute or until hot. Add peas and next 7 ingredients, and stir-fry 5 to 7 minutes or until crisp-tender.
    3. Stir in soy sauce and 1 t water; add pasta, tossing until throughly heated. Remove from heat, and toss with remaining 1 T oil and, if desired, 1 T sesame seeds. Serve immediately.


    Final Comments


    Makes 4 servings.
