    Garlic-Lime Chicken Drumettes

    • CHICKEN AND MARINADE:
    • 6 garlic cloves, minced
    • 2 teaspoons grated lime peel
    • 2 teaspoons kosher (coarse) salt
    • 2 teaspoons dried oregano
    • 2 teaspoons cumin seeds, toasted, crushed*
    • 1/2 cup lime juice
    • 1/3 cup olive oil
    • 24 chicken drumettes or party wings
    • MAYONNAISE:
    • 1 cup mayonnaise
    • 1/2 cup light sour cream
    • 1 tablespoon Dijon mustard
    • 2 to 3 chipotle chiles in adobo sauce, drained, finely chopped**
    • 1 tablespoon adobo sauce
    • GARNISH:
    • 2 avocados, sliced


    Instructions


    1. Place garlic, grated lime peel, salt, oregano, crushed cumin seeds, lime juice and oil in nonreactive shallow pan large enough to hold chicken in one layer. Add chicken; turn to coat completely with marinade. Cover and refrigerate at least 2 hours or up to 4 hours.

    2. In small bowl, stir together all mayonnaise ingredients. Refrigerate 30 minutes.

    3. Heat grill or broiler. Remove chicken from marinade; discard marinade. Place chicken on gas grill over medium heat, on charcoal grill 4 to 6 inches from medium coals or on preheated broiler pan 4 to 6 inches from broiler. Grill or broil 12 to 14 minutes or until browned and juices run clear, turning once. Serve with avocado slices.

    TIPS *Toast cumin seeds in dry skillet over medium-low heat, stirring frequently, 1 minute or until slightly darkened in color and aroma is toasty. Crush with mortar and pestle or flat side of chef's knife.
    **Chipotle chiles are dried, smoked jalapeno chiles. They come dried, pickled or canned in adobo sauce. Look for them in the Latin section of the supermarket.
