    Recipe Introduction

The rolls were delicious and one of the easiest recipes I made in a long time. I halved the recipe and made the dough in my ABM. I even used instant mashed potatoes made in the microwave. Thanks fondabkg for posting this one!

    List of Ingredients

    2/3 c sugar
    2/3 shortening (Crisco)
    1 c mashed potatoes
    2 1/2 t salt
    2 eggs
    2 pkg yeast
    1 1/3 c warm water, divided
    6-6 1/2 c all-purpose flour

    Recipe

In a large bowl cream sugar and shortening. Add potatoes, salt, and eggs. In a small bowl, dissolve yeast in 2/3 c warm water; add to creamed mixture, Beat in 2 cups flour and add remaining flour to form a soft dough.

Shape into ball, do not knead. Place in a greased bowl turning once to grease top. Cover and let rise in a warm place until double, about 1 hr. Punch dough down, divide into thirds. Shape each portion into 15 balls and arrange in three greased pans. Cover and let rise 30 min. Bake @ 375 degrees for 20-25 min. Cool on wire racks. Yield 45 rolls.

Nell's Notes: I used butter-flavored Crisco (in the sticks)and layered in ABM in this order: water, shortening, egg, mashed potatoes, sugar, salt, flour, yeast. When the dough was ready, I dumped it out on waxed paper lightly dusted with flour, dusted the top very lightly with flour and patted it out into a rectangle. I cut it into large squares with a pizza cutter, put on PAM sprayed cookie sheets and covered with PAM sprayed plastic wrap. Let rise (about 1 hour)then baked. Got 16 large rolls.
