    Posted by: jcz04*********it made the best fritters I have ever made~ It looks like a Gloopy~Gooey mess~ The gloopy batter fries and puffs up beautifully. NO heavy breading taste and the cauliflower stays crisp on the inside. I seasoned up the flour with cayenne and added some parm cheese as well. All or any additional spices or seasonings should be added to this mixture~

    List of Ingredients




    1-1/2 cups of ap flour
    2 tsp baking powder
    1/2-3/4 tsp salt
    2 cups of diced cauliflower( I left mine small to med sized )Used more than 2 cups
    1 cup shredded cheddar cheese( used a 5-6 blend shredded Italian cheese)
    1 Tbs diced onion
    1 large egg
    1 cup milk ( used low fat)

    Recipe



    Combine the first 3 ingredients. Add the cauliflower, cheese and onion. Mix well.( This is where it gets sticky) Whisk the egg and milk and add to the cauliflower mixture. Mix till just combined. Drop by spoonfulls onto the hot oil~ Fry for about 1 minuter per side. I used my cookie scoop as a measure.

    Once everything was mixed I allowed it to sit on the counter top for about 20 minutes so that the flour could settle down from the mixing process. Mine may have been a little sticky because I did use more than 2 cups of cauliflower~ Some pieces may clump together making them different sizes.

    Makes about 2 dozen~
