    Mini-Chicken Chili Cups

    Make these for those football guys who have taken up residence in front to the T.V. Use any leftover chicken or turkey in this. Ham of cooked ground beef work well too.

    List of Ingredients





    2 cups chopped cooked chicken
    1 - 1 1/2 Tbs. Taco seasoning mix
    1 cup ranch dressing or sour cream
    1 pkg. (24) Wanton wrappers
    1/4 tsp. EACH salt & pepper
    1/2 cup EACH finely chopped
    red & green pepper
    2 cups shredded Monterey Jack cheese
    Toppings: Salsa, sour cream & guacamole. Serve these toppings in hollowed out red, green and yellow peppers.

    Combine in bowl chicken, dressing or sour cream, salt and pepper. Combine cheese and taco seasoning and set aside. Spray mini-muffin pans and fit a wanton into each cup. Place in a preheated 350F. oven for 5 minutes or until lightly browned. Remove from oven and let cool. Spoon a generous spoonful of chicken mixture into each cup and top with some of the chopped red and green pepper; top with cheese mixture. Return to oven and bake for 10 minutes or until cheese has melted.
    Makes 2 dozen.
