    VERY CHEESY MINI POTATO NESTS

    Recipe Introduction


    This recipe was on the back of a package of Sargento shredded cheese. It will make 36 appetizers.

    List of Ingredients




    In a medium bowl, combine:
    8 cups (24 oz.) frozen shredded hash brown potatoes
    1 egg, slightly beaten
    1/2 tsp. salt
    1/4 tsp. black pepper

    Recipe



    Use hands to mix well. Coat mini muffin pans with cooking spray. Spoon 2 heaping tablespoonsful of mixture into each cup. Use fingers or back of spoon to press mixture firmly on bottom and up the sides of cups.
    Bake at 450* for about 20 min. or til golden brown.
    Sprinkle 1 1/2 cups (6 oz.) of sharp , shredded cheddar cheese into each nest. Return to oven and bake 2 min. til cheese melts.
    Top with 1/2 cup sour cream and 8 slices of bacon, crisply cooked and crumbled. Add additional cheese, if desired.
