    6 medium-large Idaho potatoes
    Extra virgin olive oil
    Coarse sea salt

    Recipe



    Preheat oven to 450 degrees. Peel potatoes with a paring knife (not a peeler, or you won’t get enough ‘meat’). Spread peels in a single layer in a roasting pan. Drizzle with olive oil and season with salt.

    Roast 10-15 minutes, or until golden and slightly crispy. Serve warm.

    Note: If you want to save the peels for a day or two in the fridge, place in bowl, cover top with ice cubes, and put plastic wrap on top. The ice cubes will slow down the browning of the potato.

    They’re good alongside a bowl of soup or a sandwich, or to use with a dip. You can also play with this recipe by sprinkling on cayenne pepper for a nice kick, or grated cheese right at the end or whatever suits your fancy.

    These sound like they would taste very much like baked potato skins. Why wouldn't a sour cream, chopped green onions, a few bacon bits and a bit of cheese dip do with these peels. Sounds good to me!
