    First, be sure to peed the membrane/skin off the back of the slab, most people don't know it's there!

    My baby back ribs come in long slabs, so this is how I do them...If yours are in small slabs, you don't need to cut them in half. I haven't used this for regular spare ribs, but lots of people have and they're excellent too.

    Cut slab in half and brush thoroughly with your favorite sauce. Stack two racks per package and wrap securely in heavy duty foil,making as many packages as you have slabs of ribs. Bake, in a pan to catch any sauce that may leak, at 300 degrees for 2 and 1/2 hours, flipping the packages over after an hour and a half.

    Remove from oven and foil, drain, baste with sauce, and cook on grill for 15-20 minutes, just to brown thoroughly, basting more as it browns. You'll have to be careful when handling them, as they will want to fall right off the bone! I like to grill and sauce them until they get "sticky"!!!

    This is supposedly the recipe for Tony Roma's ribs...although I'm not familiar with that restaurnt...we haven't even considered another rib recipe since we found this one, and we have tried TONS OF THEM!
