    Recipe Introduction

Posted by: sama1959ca***********This is the recipe I used recently. Excellent baked beans. I did tweak it a bit. My changes are listed in brackets

    List of Ingredients

1 lb. dry Great Northern beans, Navy beans, yellow eye, or other
    1 large onion
    1/2 tsp salt (I used 1 tsp)
    1 cup molasses
1 tsp. dry mustard (I used 1 Tbsp)
1 tsp. Worcestershire sauce (I used 2 tsp)
1 cup firmly packed brown sugar
    1/4 lb bacon (I used 1/2 lb.)

    Recipe

Place beans in large kettle. Cover with water, sprinkle with 1 tablespoon baking soda. Bring to boil. Cook covered for 45 minutes or until beans are just tender. Drain, reserving liquid. combine salt, molasses, mustard, Worcestershire sauce and brown sugar. Place 1/3 of beans in Crock Pot with small amount of reserved liquid. Cover with 1/3 of molasses mixture. Place 3 slices of bacon on top. Pace onion on top of this layer. Repeat layers, add part of reserved liquid with each layer. Cover beans with liquid. Cook on low for 9 to 11 hours or until beans are tender."

I do not pre-cook my beans. I allow them to soak overnight in water/soda. Then I rinse them thoroughly, not reserving any of the liquid.

I also used an 8 oz. can of tomato sauce and 1 tsp. of basalmic vinegar. I did not do the layering. We ate them after 7 hours, and I thought they were great. My husband thought they were still a little underdone, so I let them cook for another 2 hours.

I must say that I enjoy making beans a lot more now that I use the slow cooker.

I would like to thank Sue for reposting this recipe and also thank whoever originally posted the recipe. Great recipe. Once the search is working, search "Boston Baked Beans" for more recipes. I will try to bump some, but the search is a little crazy right now, as you know.
