    List of Ingredients




    1lb. dry white beans
    1 quart cold water
    1 small-medium diced onion
    1/2 tsp. salt
    2 tsp. cider vinegar
    1/4 tsp. prepared mustard
    1 Tbsp. brown sugar
    1/4c. mild flavored molasses
    1/2c,. ketchup
    pinch black pepper
    hot water as needed
    1/4 lb. salt pork or bacon sliced

    Recipe



    Pick and rinse beans, Add 1 quart cold water, cover, heat to boiling, simmer 30 minutes.

    Drain, keeping liquid. Place onions in bottom of casserole, (bean pot), Mix seasonings and turn into pot. Add beans, and hot liquid or water to cover. Arrange pork slices on top and cover and bake in a 250ºF. oven for 7 hours. At end of 4 hours remove one cup of beans, mash, then stir back into remaining beans. Cover and continue to bake. Add liquid several times to keep beans just covered. One hour before serving remove cover and allow pork to brown.

    Soak beans overnight in cold water and cook in the soaking water.
