    List of Ingredients




    2 lbs bottom round steak, sliced 1/4" thick, or a more tender cut, left thicker
    salt & pepper to taste
    red pepper flakes
    1/4 c olive oil
    1 medium onion, finely chopped
    2 cloves garlic, minced
    1 c chopped tomatoes
    1/2 c red wine
    1/2 c chopped fresh parsley

    Pound steak thin if using bottom round. Season the meat well with salt & pepper. Heat olive oil in skillet and brown meat well on both sides. Remove it and keep warm. Add onion and garlic to the pan and saute until tender. Add the tomatoes and the wine and simmer for about 15 minutes, or until sauce has thicken. Return meat to the pan and cook an additional 10 minutes. Serve sprinkled with fresh parsley (for company).

    My sauce: 1 c homemade spaghetti sauce; 1/2 c red wine. (I doubled this, so I used 2 c sauce, 1 c red wine). I simmered to blend flavors.

    Meat: I used thin sliced chuck steak, trimmed of outer fat (2 lbs). I dipped in egg mixed with 3T milk, then in mixture of 1 3/4 c seasoned Italian bread crumbs and 1/4 c parmesan cheese. I refrigerated a short time so breading would adhere better. I browned in olive oil on both sides. I then added to sauce and served. OMG! Another new one to add to my collection, that I will be preparing often.
