    List of Ingredients




    1 3-5 lb. beef roast (sirloin, rump, shoulder etc.)

    MARINADE:
    ½ cup red wine (I prefer Lambrusco)
    ½ cup beef broth or bouillion
    ¼ cup red wine vinegar
    ¼ cup olive oil (extra virgin is best)
    4 cloves minced garlic
    2 bay leaves
    1 Tbs. cracked black pepper
    1 tsp. coarse salt

    1 large onion cut into ½ inch rings
    2 cloves garlic, sliced into fine slivers
    ½ cup beef broth or bouillion
    ¼ cup reserved marinade

    Recipe



    Mix marinade in a bowl. Put roast into a zip lock bag and pour marinade in with it.
    Squeeze air from bag and seal. Marinate 4 hours. Remove roast and bay leaves from bag and reserve ¼ cup.
    Brown the roast thoroughly in a Dutch oven. Cut slits into top of roast and insert slivers of garlic. Cover with sliced onions. Put bay leaves in pan. Pour broth and reserved marinade over roast. Cover and bake at 350º for two hours or until temperature of meat reaches 165º. Remove to cutting board and let rest 15 minutes before slicing.
