    List of Ingredients




    2 cups flour
    1 teaspoon salt
    2 teaspoons baking powder
    1/2 teaspoon soda
    1/4 cup shortening
    1/2 cup buttermilk

    Leave out the soda if you don't use buttermilk. Sift the dry ingredients, rub in the shortening by hand until like tiny pebbles, then mix in the buttermilk by hand. The dough was wet and she would pinch off pieces and drop into a wooden bread bowl of flour, coat them with flour and roll them around in her hands to a ball. When she put them on a greased baking sheet, she flattened them to about 1/2 inch thick with the backs of her fingers. Her biscuits always had the print of her 3 middle fingers on the tops. Let them stand a few minutes until the flour on the outside of the biscuits has absorbed enough liquid not to be too dry. She made the fluffiest biscuits I've ever had and I've never been able to duplicate them exactly. I could stand beside her and do exactly what she did, using the same ingredients, but her biscuits were always better. She said it was the wetness of the dough and not kneading it that made them so tender. The wet dough makes a lot of steam to make them rise and not kneading makes them tender. Handling the dough causes biscuits to be tough.

    They bake at 425° for 12 to 15 minutes or until as brown as you like them
