    3 cups spoon sized shredded wheat (NOT the frosted kind)
    1/2 cup light brown sugar, packed
    1/2 cup honey
    1/2 cup reduced fat peanut butter (I use sugar free)
    3/4 cup dried currants
    1/3 cup toasted chopped almonds

    Recipe



    Crush shredded wheat to a coarse consistency and set aside. Spray an 8 inch square baking dish with cooking spray and set aside. In a large microwave-safe mixing bowl, combine sugar, honey, and peanut butter. Microwave on full power until bubbling at the edges, about 1 1/2 to 2 minutes. Remove from the oven and stir until smooth. Add the crushed shredded wheat, currants, and almonds. Stir until well mixed. Pour into the sprayed baking dish and press down firmly. Allow to cool completely. Cut into 16 bars. Wrap each bar in plastic wrap and store in a container with a tight fitting lid. One or two bars make a good breakfast for kids in a hurry. They go well with a glass of milk.
