    Posted by: Nindsy **********This is an easy one and so good. I have frozen it both before and after baking with good results. Whenever I want to make things ahead this is the recipe I choose. With just two of us I sometimes make this up and divide it into 3 portions, freezing 2 of them and then I have an easy weekend breakfast. I have made this recipe for years and have no idea where it originated but it is our favorite. I like to serve this with tomato or V8 Juice, or for a special brunch, maybe even bloody mary's. The original recipe called for 2 lbs sausage, one hot and one regular, and 4 cups of cheese. I "slimmed it down" LOL LOL to the following recipe and we like it better.


    List of Ingredients




    1 LB Jimmy Dean Sausage browned and drained (I use hot)
    2 cans cream of celery soup undiluted
    6 beaten eggs
    1 medium onion chopped fine
    1/3 cup raw rice (not instant)
    6 cups Rice Krispies (can use store brand)
    3 cups shredded cheddar cheese (I use sharp)

    Recipe



    Mix altogether in a large bowl and pour in greased 9X13 pan. If baking right away bake at 350 covered for 30 minutes and then uncover and bake another 30-45 minutes intil top is lightly brown and rice is done..Taste test. This sets up to a nice firm dish that can be cut into squares if you like. If frozen, thaw ahead before baking. To bake starting with it cold from the fridge I start at 375 covered for 30 minutes and then uncover and turn oven to 350 and continue baking another 45-60 minutes until top is lightly browned and rice is done.

    This dish keeps well for late sleepers or on a brunch table. I am always asked for the recipe and people are surprised at the Rice Krispies
