    List of Ingredients




    1 1/2 cups oil
    3 eggs
    1 teaspoon vanilla extract
    3 cups flour
    2 cups sugar
    1 teaspoon baking soda
    1 teaspoon salt
    1 teaspoon cinnamon
    1 (20 ounces) can cherry pie filling
    1 1/2 cups chopped pecans

    Recipe



    Beat together oil, eggs and vanilla.
    2. Sift dry ingredients together and add to egg mixture.
    3. Stir in cherry pie filling and nuts by hand.
    4. Pour into 2 greased and floured loaf pans.
    5. Bake at 350° for 50 minutes to 1 hour

    I have made this in the past and only used 3/4 C of oil, it was delicious. I have never made it with the full amount so it may not be as good as the original but in this case ignorance is bliss

    The bread is very moist. I think 3 8x4 loaf pans are needed to keep it from getting too dry before the inside is fully cooked. Watch it carefully and test for doneness. It is so moist that it doesn't slice easily..at least mine didn't but it sure tastes good and I used the almond extract instead of vanilla. I think you could use any fruit type pie filling like peach or apricot or strawberry.
