    List of Ingredients




    1/2 C sugar (1 cup)
    3 1/2 C flour (2 cups unbleached, 1-1/2 cups whole wheat)
    1/2 C cocoa
    1 tsp baking powder
    1 tsp baking soda
    1/3 tsp salt
    3/4 C margarine
    3 eggs
    1 can (21oz) Cherry pie filling (lite)
    1/2 C chopped pecans (omitted)
    1 tsp vanilla
    (I added about 1/2 to 2/3 cup soy milk for the full amount of batter) OPTIONAL

    Recipe



    Stir together flour, cocoa, baking powder, baking soda and salt. Set aside. Cream sugar and margarine. Add eggs and cherry filling. Stir in pecans, vanilla and dry ingredients. Mix well. This is a stiff batter. Spoon into 2 greased 8 1/2" loaf pans. Bake at 325° (350ºF.) in preheated oven for 1 hour. Cool 5 minutes before removing from pans. (mini loaves took less time.)

    I have noticed with this bread that it tastes better the second day. After cooled, I wrap tightly in tin foil and store in the fridge.
