    Posted by: dutchmom4 ***********My Grandma's Zucchini Bread is a moist loaf, which is why some like to add additional flour or oatmeal. I've made it with and without the variations

    List of Ingredients




    2 cups flour
    2 teaspoons baking soda (I put 1 tsp)
    1 teaspoon salt
    1/4 teaspoon baking soda (I used 1/8 tsp baking powder)
    1 Tablespoon cinnamon
    3 eggs
    2 cups sugar
    1 Tablespoon vanilla
    1 cup oil
    2 cups shredded zucchini, loosely packed
    1 cup walnuts OR pecans, chopped (optional)

    OPTIONAL ADD-INS:
    3/4 teaspoon nutmeg
    1 cup flour OR 1/2 cup oatmeal
    1 cup raisins
    1 cup pineapple, well drained

    Recipe



    -- Grease and flour two loaf pans. Preheat oven to 350 degrees.
    -- Stir together flour, baking powder, salt, baking soda, and cinnamon. Set aside.
    -- Beat eggs, sugar, vanilla and oil until thick and lemon colored. Add dry ingredients.
    -- Gently fold in zucchini and nuts. Pour into prepared loaf pans.
    -- Bake at 350 degrees for 1 hour. Cool in pans 10 minutes before removing and cooling on rack. Freezes beautifully.
