    List of Ingredients




    Makes 2 loaves
    Preheat oven to 350

    2 cups all purpose flour
    2 tsp baking soda
    1 tsp salt
    4 large diced Granny Smith apples
    1 cup chopped walnuts
    2 eggs, lightly beaten
    1 cup white sugar
    1 cup packed light brown sugar
    1/2 cup cannola oil
    2 tsp cinnamon
    1/2 tsp nutmeg
    1 cup raisins

    Recipe



    Grease two loaf pans well with Crisco. In one bowl, sift flour, soda, and salt. Set aside. Dice apples and then chop walnuts. In large bowl, beat eggs lightly
    with fork. Add apples and toss well. Add sugars, oil, cinnamon, nutmeg. Add walnuts and raisins. Stir in flour mixture just until blended. Batter will be thick. Spread into two loaf pans evenly. Bake for 45 to 50 minutes...test for doneness at 45 minutes. Cool on rack 10 minutes or so before turning out

    Glaze:
    2 cups powdered sugar
    Enough hot water to make a drizzle

    Mix sugar and water and pour over loaves.

    These are best cooled thoroughly and then wrapped in foil and stored in fridge over night. Loads and loads of apples and nuts and raisins with every bite!

    Filled the mini-loaf pans about 1/2 way full, and they look great (just hitting the top of the pan)
    This made 6 mini-loaf pans (the foil ones at Wal-Mart) nice start on my holiday baking
