    1 c. flaked coconut
    2 c. all purpose flour
    1 tbsp. baking powder
    1 tsp. ground cinnamon
    1/2 tsp. salt
    1/2 tsp. baking soda
    3/4 c. sugar
    1 c. finely chopped walnuts or pecans
    1 egg
    1/4 c. milk
    1/3 c. salad oil
    1 tsp. vanilla
    2 large, soft ripe bananas

    Spread coconut in a shallow pan and bake in a 350 degree oven, stirring occasionally, until lightly toasted (12-15 minutes). Set aside to cool.

    In a large bowl, mix flour, baking powder, cinnamon, salt, baking soda, and sugar. Stir in nuts and coconut. Beat egg with milk, salad oil, and vanilla until well combined. Mash bananas (you should have about 1 cup); blend with egg mixture. Add banana mixture to dry ingredients, mixing just until blended.

    Spread in a greased, lightly floured 4 1/2" by 8 1/2" loaf pan. Bake in a 350 degree oven until loaf is well browned and a wooden pick inserted in center comes out clean (50-60 minutes). Let stand 10 minutes, then turn out onto a wire rack to cool completely. Flavor is best if, after cooling, bread is wrapped and allowed to stand at least one day.

    Makes 1 loaf
