    3 eggs, beaten
    2 cups mashed very ripe bananas
    1 box yellow cake mix
    1 cup chopped nuts, optional

    Recipe



    Combine eggs and bananas. Dump in the dry cake mix and beat on low speed just until moistened. Then beat on medium speed for 3 minutes. Fold in nuts if used. Pour batter into two 8x8x4 inch loaf pans. Bake at 350° until the top springs back when lightly touched, about 50 minutes. Cool in the pans for 10 minutes. Then turn them out to cool completely on a rack. If a glaze is desired, heat 1/2 container of prepared frosting in the microwave oven for about 7 seconds. Don't let it completely liquefy, just get soft enough to drizzle over the loaves. The frosting will harden when it cools in just a few mintues. NOTE: The riper the bananas the better. You can usually find bananas at a very low price in the grocery store after thay have started to turn brown. These are perfect. For the glaze, I like White Chocolate Almond.
