    List of Ingredients




    1 1/3 c. granulated sugar
    2 tsp ground cinnamon (I used 1 ½ tsp Saigon Cinnamon)
    2 c. all-purpose flour (divided if using raisins)
    1 Tbsp. baking powder
    1/2 tsp. salt
    1 egg (beaten)
    1 c. milk
    1/3 c. vegetable oil
    ½ cup golden raisins (plump in microwave in a little water – about 1 minute) – my add

    (Note: if adding raisins, drain off the water, and either drain them in a colander or put them on a paper towel to drain before using. I used ¼ cup of the flour to coat them.)

    Preheat oven to 350 degrees. Grease and flour a 9x5x3-inch loaf pan. Mix 1/3 cup. sugar and cinnamon; set aside. In a large mixing bowl, combine flour (if using raisins, used 1 ¾ of the flour here), baking powder, salt, and remaining sugar. Combine egg, milk, and oil; add to flour mixture. Stir by hand just until moistened. (If using raisins, coat them with ¼ cup flour and then stir the raisins into the mix.) Pour half the batter into prepared pan. Sprinkle with half the cinnamon mixture. Repeat with remaining batter and cinnamon mixture. Draw a knife through batter to marble.

    Bake for 45 to 50 minutes or until a toothpick comes out clean. Cool in pan for 10 minutes. Remove from pan. Cool. Wrap and store bread overnight before slicing.

    I made 4 loaves last week and have also been thinking of some new tweaks to use. Though it is great as it is, I have been thinking of mixing brown sugar, cinnamon and finely chopped pecans for swirling. I love this bread and everyone that I've given it to also raves about it. For such a simple, quickly made loaf it just can't be beat.

    I think the next time, I'll double the amt. of cinnamon-sugar mixture. Then, I'll put a lot more on the top to make it taste like those good muffins from Panera. I really think that's what they do to make their muffins taste so good - they put a lot of the cinnamon-sugar mixture on the top.

    Made it with half brown, half white sugar, it turned out wonderful!!!
    Smells so good! But...how do they expect you to wait till the next day to slice it???
    Yeah right! Emma and I had to cut it while it was still warm.With some butter on it... Heaven!
