    3 sticks of butter @ room temp.
    3 Cups of sugar
    5 eggs ( I use room temp ones)
    1 Tbs. Pure Lemon Extract
    3 cups cake flour (I use swans down)
    3/4 Cup 7-up, no substitutes

    Recipe



    Preheat oven to 325 degrees. Grease and flour angel food bundt pan (most cakes I make, i use pam, but for this one the grease and flour method is a must. Otherwise you wont get the crunchy "crust" on the cake). Cream butter , sugar and eggs. (Add one egg at a time & beat for 5 minutes Very Important! after each addition) I use speed 2 on my KA mixer. Gradually add cake flour, lemon extract and 7-up alternated this way. Mix for an additional 10 minutes when all added. Bake @ 325 for 1 hour to 1 hour 15 minutes. Use cake tester after 1 hour of baking. I find that 1 hour 10 minutes is perfect.

    *Invert on plate Immediately after removing from the oven or you will have a mess if you let it cool in the pan. Now some people like this plain, but I do make a "glaze" that I made up to drizzle over this. I just use 1 -1/2 cups of powdered sugar and wisk in the juice of 1 whole lemon until a good consistency. Sorry I dont have a real recipe for the glaze...I just kept making different ones till i found the best one, and this is it. Serve warm or cool and you'll be in heaven, I promise!
