    16 cupcakes

    TOPPING:
    1/2 cup (4 oz) cream cheese, softened
    1 large egg, lightly beaten
    2 tblsps granulated sugar
    1/3 cup EACH: peanut butter pieces & chocolate pieces

    In small bowl, combine cream cheese, egg & sugar until smooth. Stir in peanut butter & chocolate pieces; set aside.

    CUPCAKES:
    1-1/2 cups all purpose flour
    1 cup granulated sugar
    2 tsps cornstarch
    1-1/2 tsps baking powder
    1/2 tsp EACH: baking soda & nutmeg
    1/4 tsp salt
    2 large eggs
    3/4 cup Libby's Solid Pack 100% Pure Pumpkin Puree
    1/4 cup vegetable oil
    1 tsp pure vanilla extract

    Recipe



    Heat oven to 350ºF. Line muffin cups with paper baking cups.

    In med bowl, combine flour, sugar, cornstarch, baking powder, baking soda, nutmeg & salt; set aside.

    In another med bowl, beat eggs; stir in pumpkin, oil & vanilla. Add to dry ingredients, blending well. Fill prepared muffin cups 1/3 full with batter. Spoon 1 tblsp topping over batter.

    Bake in preheated 350ºF oven 20-25 mins. Cool on wire racks.

    HINT: When baking only 6 muffins in 12-cup pan, fill unused cups 1/2 full of water. This keeps pan from overheating.
