    Posted by: msrecipe***********I’ve made this recipe so many times and it’s delicious. It travels well too. I had blueberries in the freezer so I made it and took it into a morning meeting at work. It was a hit. Had this recipe for many years. I entered it into a Bicentennial contest in 1976 and it was one of the winners. The local newspaper published a Bicentennial cookbook with all the winning entries

    List of Ingredients




    3/4 cup sugar
    1/4 cup shortening
    1 egg
    1/2 cup milk (1% or 2% is fine)
    2 cups flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    2 cups fresh blueberries

    Streusel Topping:
    1/2 cup sugar
    1/3 cup flour
    1/4 cup margarine (or butter
    3/4 teaspoon cinnamon
    1/2 cup chopped pecans (or walnuts)

    Recipe



    Cream the sugar and shortening until fluffy; beat in egg. Sift flour, baking powder and salt together. Add dry ingredients to creamed mixture alternately with milk. Fold in blueberries. Spoon batter into a greased and floured 9-inch square pan and spread evenly. Combine the sugar, flour, margarine and cinnamon until well blended (use your fingers or pastry blender.) Sprinkle this streusel mixture over batter. Top with chopped nuts. Bake in a preheated 375 degree oven for 45-50 minutes.

    Note: This batter is very stiff, don’t be alarmed.
