    This recipe is the best I have ever eaten - I don't even copy Carrot cake recipes any more. It is not for those afraid of fat or sweetness, nor is it diet-friendly, but OMG is it delicious! It is soooo moist, but it does not have refrigerated batter

    List of Ingredients




    2 C. all purpose flour
    2 c. sugar
    2 tsp. baking soda
    1-1/2 tsp. cinnamon
    1 tsp. salt
    2 c. shredded carrots
    3/4 c. buttermilk
    3/4 c. cooking oil (canola or veg.)
    8 oz can crushed pineapple, drained
    1 c. chopped walnuts
    3 eggs
    1-1/3 c. coconut
    1 tsp. vanilla
    raisins if desired
    walnuts to garnish

    Recipe



    Grease 13 x 9 x 2 pan and lightly flour. Preheat oven to 350º. Combine flour, sugar, soda, cinnamon and salt. Add carrots, buttermilk, oil, pineapple, eggs, coconut and vanilla (raisins and walnuts if using). Stir until combined. Spread batter in pan. Bake 40-45 minutes or until cake springs back. Poke holes in top of cake while hot and pour on glaze. Frost when cool.

    Glaze:
    3/4 c. sugar
    1/3 c. buttermilk

    Frosting:
    8 oz cream cheese
    1/2 c. butter, softened
    2 tsp. vanilla
    1 box powdered sugar.

    Beat cream cheese, butter and vanilla til light and fluffy. Gradually add enough sugar to make frosting consistency. Spread on cake. Top with walnuts
