    Posted by: walkerjan_WI************I got this recipe from a professional baker. She made a ton of wedding cakes and she said this one was very popular. I was just going to make this this weekend.

    List of Ingredients




    2 c. flour
    1 tsp. baking powder
    2 tsp. baking soda
    1 tsp. cinnamon
    1 tsp. salt
    2 c. sugar
    1 1/2 c. oil
    3 c. carrots
    4 eggs
    1/2 c. nuts

    Recipe



    Mix oil and sugar, add eggs 1 at a time, beating well after each egg. Stir in dry ingredients and carrots and nuts.

    Bake 325 40-45 min. or until cake tests done.

    I used 2 9 in. round pans. I don't know if 9 x 13 pans work.

    I also frost with a cream cheese frosting.
