    Posted by: mary217 *******I doubled this recipe. And it is GONE! My DIL does not like cake and she ate 2 large pieces!!!! I am making it again when my DH gets home off the road, to serve with caramel and hot fudge topping and icecream! It is soooooooo good! Only, I am leaving off the frosting...would also be a Great snack cake!

    List of Ingredients




    Chocolate Oatmeal Cake

    1 cup quick oatmeal
    1 stick margarine or butter
    1-1/2 cup boiling water

    pour boiling water over the oatmeal and margarine, let set for
    twenty minutes, stirring frequently.

    add:
    2 eggs Blend well with the first mixture.

    Sift together;
    1/2 cup cocoa
    1 1/2 cup sugar
    1 cup flour
    1 tsp. baking soda
    1/2 tsp. salt
    add the dry ingredients to the oatmeal and egg mixture. Stir well.
    Pour into a 9x9 inch greased and floured pan. Bake at 375 degrees
    about 25-30 minutes or until it tests done. This cake doubles and
    triples well. If you double put it in a 9x13 inch pan.

    Chocolate Icing
    1/2 cup cocoa
    1/2 tsp. salt
    2 cup sugar
    1/2 cup milk
    1/2 cup margarine or butter
    combine all ingredients and boil together for 2 minutes. Remove from
    heat and add 1 tsp. vanilla. Cool until lukewarm. Beat until creamy
    enough to spread. If the frosting is too thin add powdered sugar to
    make the right spreading consistency
