    List of Ingredients




    2 cups all-purpose flour
    1/2 tsp. baking soda
    1/2 tsp salt
    1 1/2 cups granulated sugar
    1/2 cup shortening (I use crisco butter sticks)
    1 cup buttermilk
    1 egg
    1 tsp vanilla extract
    2 cups diced peaches (canned, fresh, frozen - doesn't matter)

    Topping:
    1/2 cup granulated sugar
    1 tsp. ground cinnamon

    Recipe



    Sift together flour, baking soda & salt - set aside. In mixer, beat together sugar and shortening until creamy. Blend in buttermilk, egg and vanilla. Combine wet and dry ingredients, mixing until just combined. Gently stir in peaches. Pour batter in greased 11-inch by 7-inch baking dish. In small bowl combine topping ingredients & sprinkle over cake. Bake in preheated 350 degree oven for 40 minutes. Makes eight servings. YUM!!
