    Pineapple Cake (very good 9X13 pan)

    List of Ingredients




    2 eggs
    1 can crushed pineapple with juice... probably 16 to 20 oz.
    1/2 cup chopped pecans
    2 cups flour
    2 cups sugar
    2 tsp. baking soda
    1 tsp vanilla
    1/4 tsp salt
    beat eggs. add remaining ingredients. mix well until blended. bake in cake pan for 35-40 min at 350. i spray the pan.

    icing
    8 oz. cream cheese softened.
    1/2 stick butter softened
    1 3/4 cup sifted powdered sugar
    1 1/2 cups chopped pecans
    mix well and spread on cake while cake is still warm.

    I've made this before, but used a jelly roll pan (10x15) for a sheet cake. It is delicious! I think my recipe is called a Mexican Wedding Cake or something like that.
