    List of Ingredients




    Makes a 3 layer cake

    1 (18.5 oz.) Package white cake mix with pudding
    3 large eggs
    1 1/4 cups buttermilk
    1/4 cup vegetable oil
    1 (3 1/2oz) can flaked coconut
    2/3 cup chopped pecans - toasted
    3 Tablespoons rum (Optional)
    Cream Cheese Frosting

    Recipe



    Beat first 4 ingredients at medium speed for 2 minutes. Stir in coconut and pecans
    Pour batter into 3 greased and floured 9 inch cake pans
    Bake at 350 degrees for 15-17 minutes or until pick inserted in center comes out clean
    Cool in pans on rack for 10 minutes - remove and cool completely
    Sprinkle layers with rum and let stand for 10 minutes
    Frost with cream cheese frosting

    Cream Cheese Frosting: 1 (8oz) package cream cheese softened, ½ cup butter or margarine softened, 1 (16oz) package powdered sugar, 1 cup chopped pecans toasted, 2 teaspoons vanilla extract;
