    List of Ingredients




    3 cups cooking apples, peeled and sliced (I generally use Granny Smith)
    1 1/2 cups vegetable oil
    2 cups gran. White sugar (you can substitute part brown)
    3 eggs
    2 tablespoons vanilla
    3 cups pre-sifted plain flour
    3 teaspoons cinnamon
    1 teaspoon baking soda
    1 teaspoon salt
    1 cup chopped pecans or walnuts (reserve some for decorating top of cake)

    Preheat oven to 325 degrees. Grease a 9 x 13 glass baking dish.
    CAKE:
    Prepare apples and set aside (I sometimes sprinkle part of the cinnamon over the apples).
    Blend the oil, sugar, eggs and vanilla; add the flour, salt, baking soda and cinnamon Mix well; stir in the apples and nuts. Pour into pan and bake 45-50 minutes.
    TOPPING: Combine brown sugar, butter and milk in a small saucepan; bring to boil and pour immediately over the hot cake. The icing will partially be absorbed into the cake leaving a caramel topping. Trim with reserved nuts. Do not cut for at east one hour.

    Note: If canned apples are used, use 1 1/2 cans of unsweetened pie apples. Drain apples well and pat with paper towels.
    Travels nicely and cuts into squares that can be eaten with the fingers. Great for tailgates, potlucks, and fall outings!”

    TOPPING:
    1 cup brown sugar
    6 tablespoons butter
    1/4 cup evaporated milk
