    I answered a thread about what kinds of Christmas gift do we give. I mentioned that one year I made 8 different kinds of fudge in 8 pie plates. Then I cut each pie into 8 slices. I re-assembled the pies so that each pie had 8 different kinds of fudge slices. Here the recipes I used (plus some). I think I'll do each kind of fudge in a reply so it will be easier to copy and paste. I hope you enjoy this. My friends really liked getting to try a little of everything. And the pies looked pretty, too.

    List of Ingredients




    1 tablespoon boiling water
    1 tablespoon instant coffee granules or crystals
    1 teaspoon cinnamon
    2 1/2 cups sugar
    1/2 cup margarine or butter
    5 oz. can evaporated milk
    7 oz. jar marshmallow creme
    12 oz. package semi-sweet chocolate chips
    1 teaspoon vanilla

    Recipe



    Line a pan with foil (pie plate, 9-inch square or 9 x 13) so that foil extends over sides of pan; butter foil.

    In a small bowl, combine boiling water, instant coffee and cinnamon; set aside.

    In a large saucepan, combine sugar, margarine and milk. Bring to a boil, stirring constantly. Continue boiling for 5 minutes over medium heat, stirring constantly. Remove from heat. Add marshmallow creme and chocolate chips, coffee/cinnamon mixture and vanilla; blend until smooth. Pour into prepared pan. Cool to room temperature. Score fudge into desired pieces. Refrigerate until firm.

    Remove fudge from pan by lifting foil; remove boil from fudge. Using a large knife, cut throught scored lines. Store in refrigerator. About 3 pounds.
