    Cornflake Candy

    List of Ingredients

    1 c. light corn syrup
    1 c. sugar
    1 c. peanut butter (creamy or crunchy)
    5 c. corn flakes, crushed slightly

    Recipe

    1. Bring corn syrup and sugar to a rolling boil.
    2. Boil for 1 minute longer. Turn off heat.
    3. Stir in peanut butter until melted.
    4. Stir in corn flakes.
    5. Drop onto waxed paper to cool.

    Switch the Corn Flakes to Rice Chex and have Pay Day Bars. Press into greased 13 x 9 - inch pan. Cut into bars before they are completely cooled.

    VARIATION: If you want them extra peanut buttery (gooey):

    1 "heaping" cup sugar
    1 "heaping" cup corn syrup
    1 "heaping" cup peanut butter
    1 teaspoon vanilla

    I smooshed them in the pan, put mini marshmallows on top, and popped it in the oven until they started to melt a little (you want them to stick to the cornflake candy). Then I put some "real" choc chips in a baggie and melted them. I cut a tiny hole in the baggie and drizzled generously the choc over the marshmallows, criss crossing it. I sprinkled holiday jimmies on top while the choc was still wet. Wow, very cool looking and delicious! Would make a great addition to any holiday tray. People would think I slaved over it for hours!!
