    starshineeliz**************R1705800This is the best fudge! I have people from work after me and after me to make it at Christmas! I have to make several batches, some with nuts and some without. I will put it up against anyone's fudge. It's the thick, rich, chocolate fudge, not the dry kind. This one you have to keep in the fridge. It's worlds better than the kind you make in the microwave with the Eagle Brand. Once you've made this you will never make that kind again!
    I hate using a candy thermometer,and it isn't necessary as long as you time it correctly..it is very rich and very good. Store in the refrigerator under foil..plastic wrap will melt it a little.

    List of Ingredients




    4 cups sugar
    12 oz can evaporated milk
    18 oz bag chocolate chips
    1 lb butter (that's right!)-use the real stuff and cut in one inch pieces
    1 Tbsp vanilla
    Chopped walnuts if desired

    Recipe



    Bring sugar and evaporated milk to a rapid boil in a large pot. Boil for 9 minutes exactly, stirring constantly (this is not a rolling boil, but a simmering boil over about a medium heat, but make sure it is boiling) Then remove from heat and add chocolate chips, butter, and vanilla. Stir up..the butter and chips will melt (sorry if I am being too simple but I want to make sure and not leave anything out) Pour into a mixer or a large bowl if using a hand mixer, and blend thoroughly on low speed, then beat on medium speed for exactly 10 minutes. If you use a hand mixer your hand will get really tired!(At that point you can add walnuts if desired, or do half and half - pour in two separate pans- is what I usually do.) Pour into buttered 9 x 13 inch pan. Place in refrigerator. After 30 minutes remove to score (makes it easier to cut later) then return to refrigerator for about 4 to 5 hours anyway,(I usually leave it overnight).
