    I really, really like chili, so I can some of my tomatoes just with tomatoes (scald, peel, plop in jar with 1 teaspoon salt), but I do more than half of my tomatoes with the onions and green peppers mixed in. The onions and peppers are abundant at the same time the tomatoes are, so it makes sense to take advantage of that instead of buying onions and peppers in the winter when I want to make chili.

    I cut all the onions and peppers up ahead of time, then when I'm ready to put the tomatoes in the jars, I fill the jar half full with tomatoes, throw in a handful each of onions and peppers, then fill the rest of the jar with more tomatoes. Because the onions and peppers are cold, I don't take a chance on letting the jars seal themselves - I put them into a water bath for 10-15 minutes.

    Then in the winter, I have easy, inexpensive chili.
