    Posted by: takomom*This is our favorite recipe for enchalada sauce. A friend that owned a Mexican restaurant gave to my mom years ago.

    List of Ingredients




    6 tablespoons butter
    2 quarts water
    2 teaspoons salt
    1 tablespoon chili powder
    1 tablespoon paprika
    2 tablespoons beef base
    1/2 cup tomato paste

    Thicken with:
    2 cups cold water
    1 cup flour

    Recipe



    Combine first seven ingredients in a large sauce pan or pressure cooker. Simmer in sauce pan for at least one hour (up to 3 hours) or cook in pressure cooker for 20 mins.
    Combine cold water and flour and add to sauce gradually to thicken. Bring to a rolling boil for 3-5 minutes, remove from heat.

    This makes enough sauce for two 9 X 13 inch casserole dishes.
    You can cut the recipe in half, or freeze half of the sauce.
