    Posted by: mnmomma ************I'm not sure who exactly posted this recipe but I must have copied it last summer. (Thank you to whoever it was!) Oh my... this is sooo good. We made a batch this weekend since I had a lot of zucchini to use up and had to give it a taste last night. It has a good spicy kick!

    List of Ingredients




    10 c zucchini, peeled & shredded
    4 onions, chopped
    2 green peppers, chopped
    2 red peppers, chopped
    1/4 c pickling salt
    1 Tbsp pickling salt
    2 Tbsp dry mustard
    1 Tbsp garlic powder
    1 Tbsp cumin
    2 c vinegar
    1 c brown sugar
    2 Tbsp red pepper flakes
    1 tsp nutmeg
    1 tsp pepper
    5 c chopped & peeled tomatoes
    2 Tbsp cornstarch
    2 cans (6 oz each) tomato paste

    Recipe



    In a large glass bowl, combine zucchini, onions, green pepper, red pepper and the 1/4 c salt. Mix and let stand overnight. The next day, rinse and drain well. Put in a large pt and add remaining ingredients. Bring to a boil and simmer for 15 minutes. Pour into hot jars and seal. Process in boiling water bath for 10 minutes.
