    blanche them and then remove the skins, slice them into the size I wanted for my filling, add the sugar and flour called for by my recipe and freeze in ziploc bags

    To use, I allowed them to mostly thaw, poured into my prepared crust and baked as directed, but adjusting the time to allow for the fact that usually the peaches were still cold and maybe a little frozen. You might have to add a little more flour to thicken as this method seems to make the filling juicier.
